Vanilla Chia Flax Oats

This is really for me to remember this recipe as I made it up on a whim this morning, and it turned out great!  I was at Sams Club yesterday and passed by this delicious-looking breakfast treat:



The main ingredient (rye flakes) has gluten, so I couldn’t purchase it.  Sigh.

And of course, I woke up this morning still thinking about how delicious it would be – all those nutty, wholesome, delicious flavors bursting with protein. So I gathered my ingredients and came up with my own.

And it was good.  So good!


Vanilla Chia Flax Oats

1/2 cup GF rolled oats (not quick cooking)

1 T. chia seeds

1 T. ground flaxmeal

1 1/4 cups vanilla almond milk (can use plain)

1/2 banana, thinly sliced


Mix all ingredients, except for the banana and slowly bring to a boil.  Once boiling, add thin slices of banana and stir until banana is mashed and oats have cooked (4-5 minutes).

Top with anything (crushed almonds, berries) or eat plain!
